These are the games that I enjoyed playing most. I will update this list as I try new games.

Halo Reach delivers on every front. The intense single player campaign is full of variety, the story, sound effects and voice acting are excellent making Halo Reach an absolute must have for XBOX 360.
The game looks amazing and plays great too. The story is told excellently and progresses amazingly with an epic ending. There are lots of side quests in the game even after you've completed it.
The XBox (or console versions in general) is easier to pick up and play but the PC version is a much larger world with more bells and whistles.
Fantastic visuals, excellent sound, a there are a lot of characters to choose from right out of the box. I just cant stop playing it.
