The XBox (or console versions in general) is easier to pick up and play but the PC version is a much larger world with more bells and whistles.

The PC version is a much larger world with more bells and whistles. Mods and User created content are encouraged which offers much more variety overall and the PC version is much more open for online multiplayer options.
The default controls for the PC version are tiring because they are set up for mouse and keyboard. The default user interface is also harder to learn and pickup (For example, crafting recipes are not readily available, and not clear about what a new player can or cannot do in the game).
